If you’re a cheese lover, these homemade bourekas are going to become a new favorite. They’re flaky, buttery, and filled with a rich blend of Bulgarian feta, ricotta, manchego, and gouda that bakes into the most delicious cheesy center. Whether you’re serving them for brunch, entertaining guests, or enjoying them as a snack, they disappear every single time I make them.
This recipe makes approximately 24 bourekas and couldn’t be easier thanks to store-bought puff pastry.
Ingredients
For the Bourekas
- 2 sheets puff pastry, thawed
- 1 cup Bulgarian block feta cheese, crumbled
- ⅔ cup ricotta cheese
- ½ cup freshly grated manchego
- ½ cup freshly grated gouda
- 2 large eggs
- Freshly ground black pepper, to taste
For the Topping
- 1 large egg, beaten
- Sesame seeds
Directions
- Preheat your oven to 350°F and lightly grease two baking sheets.
- In a medium bowl, combine the crumbled feta, ricotta, manchego, gouda, eggs, and freshly ground black pepper. Mix until smooth and well combined.
- Lightly flour your work surface and gently roll out each sheet of puff pastry.
- Cut each sheet into 12 equal squares.
- Spoon a generous amount of the cheese filling into the center of each square.
- Fold each square diagonally into a triangle and press the edges together. Seal the edges with a fork.
- Arrange the bourekas seam-side down on the prepared baking sheets.
- Brush each one generously with beaten egg and sprinkle with sesame seeds.
- Bake for 25–30 minutes, or until puffed and beautifully golden brown.
- Allow them to cool for a few minutes before serving.
A Few Tips
🤍 Bulgarian feta gives these bourekas their rich, salty flavor, but if you can’t find it, any good-quality block feta will work.
🤍 Don’t overfill the pastry. A generous spoonful is perfect and helps keep the filling from spilling out while baking.
🤍 Depending on how full you make each boureka, you may need a little extra filling. If I run out, I simply mix together a little more and keep going.
🤍 These are delicious served warm straight from the oven, but they also reheat beautifully the next day.
